3 pieces King oyster mushroom
2) 白芝麻 100g
100g of White Sesame

5) 香菜 20g
20g of Cilantro
6) 鹽 20g
20g of Salt
7) 胡椒粉 少許
A little Pepper
8) 山芋泥 少許
A little Mashed Yam
9) 中筋麵粉 100g
100g of Plain Flour
10) 薑末 20g
20g of Minced Ginger
11) 白醋 20ml
20ml of White Vinegar
12) 糖 15g
15g of Sugar
13) 水 50ml
50ml Water
14) 素辣椒魚露 50ml
50ml of Vegetarian Fish Sauce

烹飪步驟 Cooking steps
- 紫高麗菜、紅蘿蔔切絲;山藥去皮磨成泥;香菜洗淨備用。
Purple cabbage and carrots are shredded; yam is peeled and mashed; cilantro is washed and set aside. - 杏鮑菇切薄片,加入鹽、胡椒粉、薑末、糖、白醋、素魚露醃漬至入味,備用。
Thinly slice the shiitake mushrooms and marinate with salt, black pepper, minced ginger, sugar, white vinegar, and vegetarian fish sauce until they are flavored. - 將山藥泥、中筋麵粉、水混合,製成麵糊,備用。
Mix the yam paste, all-purpose flour, and water to make a batter and set it aside. - 杏鮑菇沾麵糊,裹白芝麻,入油鍋炸至金黃色,起鍋瀝油。
Dip the shiitake mushrooms in the batter, coat them with white sesame seeds, and deep-fry until golden brown. Remove from the oil. - 以紫麗菜絲、紅蘿蔔絲、香菜擺盤,完成!!!
Arrange on a plate with purple cabbage, carrot shreds, and cilantro. Enjoy!
