天貝是由真菌發酵的黃豆產品,是一種原產於印尼的傳統豆類食品。傳統天貝的培養方式是接種根霉屬真菌到煮過的脫皮大豆,然後使用香蕉葉包覆已接種的大豆。在經過一至兩天發酵,就會得到一種白色餅狀的食品原料。
Tempeh is a traditional Indonesian soybean product which is fermented from fungi. The traditional process to make tempeh is using a natural culturing and controlled fermentation process which bring the result binding the soybeans into a form like cake. The fungus used in the fermentation process is called Rhizopus oligosporus or Rhizopus oryzae. It is also known as the starter of tempeh.
另外也有其他五穀雜糧被使用為原料來製作天貝。近代在衛生的考量之下,原本做為發酵用的香蕉葉已改成使用塑膠材質或不銹鋼的製品作為發酵天貝用的容器。而天貝的成品在運送以及保存的時候會使用冷藏或冷凍方式進行。
Additionally, various grains and cereals are also used as ingredients for making tempeh. In recent times, due to hygiene considerations, the traditional banana leaves used for fermentation have been replaced with containers made of plastic or stainless steel for the fermentation process. Finished tempeh products are transported and stored using refrigeration or freezing methods.

Tempeh contains higher soy protein, dietary fiber, vitamin B complex, etc. It’s a food easy to absorb and digest; its dense flavor make it tastes intense. Tempeh is a good food to be the main ingredient in vegetarian repice and to replace meat dishes. Here is sharing a delicious, sour and spicy Thai flavor Tempeh to all.
食材及佐料 Ingredients and seasoning
1) 天貝 200克
200g Tempeh
2) 番茄 70克
70g Tomato
3) 素火腿 50克
50g Vegetarian ham
4) 薑末 30克
30g Minced ginger
5) 九層塔 40克
40g Basil
6) 辣椒 1條
A Chili
7) 糖 適量
An adequate amount of Sugar
8) 胡椒 少許
A little of Pepper
9) 素蠔油 適量
An adequate amount of Vegetarian Oyster Sauce
10) 檸檬汁 適量
An adequate amount of Lemon juice
11) 鹽 適量
An adequate amount of Salt
12) 醬油 少許
A little bit of Soy sauce
13) 油 適量
An adequate amount of Oil
以上份量為4人份。
The serving size is for 4 people.
烹飪步驟 Cooking steps
- 天貝切0.8公分丁。
Dice tempeh into 0.8 cm wide. - 番茄去籽,切1公分丁。
Remove the seeds from the tomato and dice it into 1 cm wide. - 火腿切0.5公分丁。
Dice vegetarian ham into 0.5 cm wide. - 九層塔切粗絲。
Slice basil. - 辣椒切斜。
Cut the pepper on the diagonal. - 天貝過油至金黃色備用。
Fry the tempeh until golden brown and set aside. - 熱鍋,油炒香薑末,加入番茄略炒,加入炸好的天貝及火腿略炒。
In a hot wok, fry minced ginger in oil, add tomatoes and fry for a while, add fried tempeh and ham. - 加入調味料糖、鹽、胡椒、醬油、素蠔油炒香。
Add seasoning: sugar, salt, pepper, soy sauce, vegetarian oyster sauce and stir fry until fragrant. - 最後加入辣椒、九層塔和檸檬汁快速翻炒即可起鍋。
Finally, add the chili, basils and lemon juice and stir fry quickly to dish up.
