豆腐低卡、營養、富飽足感,觀音山主廚將臭豆腐及餡料包入豆皮中,酥炸成臭豆腐起司捲,讓吃素變得不無聊,蔬食也能創意又美味!
Tofu is low-calorie, nutritious, and provides satiety. Chef of Guanyinshan wraps stinky tofu and fillings into bean curd sheets. After frying, they become stinky tofu cheese rolls which are delicious and interesting. Green food can be culinary delights!

食材及佐料 Ingredients and seasoning
1) 臭豆腐 4塊
Four pieces of Stinky tofu
2) 千張豆皮 6張
Six Bean curd sheets
3) 純素起司絲 200克
200g Vegan Shredded Cheese
4) 九層塔末 40克
40g Minced Basil
5) 胡蘿蔔末 30克
30g Minced Carrot
6) 玉米粒 60克
60g Kernel Corn
7) 胡椒粒 適量
Adequate amount of Peppercorn
8) 糖 適量
以上為5人份的食材量。

烹飪步驟 Cooking steps
【刀工 Cutting / 前處理 Beforehand preparation】
- 豆腐捏碎備用。
Smash the tofu for later use.
【調理作法 Cooking】
- 九層塔洗淨擦乾切成細末,混合蔬菜、豆腐及切碎起司,用豆皮捲。
Wash and wipe the basil, then mince it and mix them with tofu, chopped cheese and other vegetables.Next, roll the fillings into tofu skins. - 放入油鍋中,炸至金黃色即可擺盤,完成!
Fry the rolls until golden brown. And let’s plate them!
【特別說明 Special Note】
- 油炸時,可以沾上酥漿粉。
Before frying, the rolls can be dusted with a thin layer of crispy frying powder. - 千張豆皮可用腐皮替代。
Bean curd sheets can be replaced by yuba. - 純素起司絲可於蔬食超市購買。
Vegan cheese shreds can be purchased at vegan-friendly supermarkets.
