食材及佐料 Ingredients and seasoning
1) 絲瓜 2條
Two loofah
2) 素肉粒(乾) 50克
50g Vegetarian meat (Dry)
3) 薑末 20克
20g Minced Ginger
4) 辣椒 15克
15g Chili
5) 中芹末 25克
25g Celery
6) 辣豆瓣醬 40克
40g Spicy bean paste
7) 素蠔油 30克
30g Vegetarian oyster sauce
8) 砂糖、白醋、白胡椒粉、水 適量
Adequate amount of Sugar, White vinegar, White pepper, Water
9) 太白粉 少許
A little of Potato Starch
以上為5人份的食材量。
For 5 people serving.
烹飪步驟 Cooking steps
【刀工/前處理 Beforehand preparation】
- 絲瓜切3公分條狀,沾太白粉,炸過備用。
Cut loofah into 3 cm strips & roll in potato starch to coat, and fry for later use. - 素肉粒泡發,水分擠乾過油備用。
Soak vegetarian meat pellets, squeeze water off and stir fry slightly for later use. - 辣椒切片。
Slice chili.
【調理作法 Cooking】
- 油爆香薑末,加入素肉粒略炒。
Saute the minced ginger. Add in vegetarian meat and stir fry a bit. - 加入調味料:辣豆瓣醬、素蠔油、糖、白胡椒、水煮滾。
Add seasonings: spicy bean paste, vegetarian oyster sauce, sugar, white pepper, and water and bring to a boil. - 加入絲瓜燒煮入味,起鍋時加少許白醋拌勻,撒上中芹及辣椒即可。
Add the loofah until baked into. Add a little white vinegar and mix well; sprinkle with celery and chili. This dish is ready to be seserved.
