介紹 Introduction ➤➤ 澎湖絲瓜
澎湖絲瓜,其品種是屬於稜角絲瓜,東方常使用的蔬菜之一。原產地是在印度,主要是在亞洲栽培,依據果實的長短可以分成四種:
- 細長型,果長大約 60 公分
- 長棍棒型,果長大約 50 ~ 60 公分
- 中間型,果長大約 40 ~ 50 公分
- 短棍棒型,果長大約 30 公分
澎湖種稜角絲瓜是澎湖地區重要的經濟蔬菜之一,屬於短棍棒型的地方品種,但果實較短,也容易彎曲。
Penghu Loofah belongs to Luffa acutangula Roxb., is one of the vegetables commonly used in the East. Its origin is in India, mainly cultivated in Asia, and can be divided into four types according to the length of the fruit:
- Slender, about 60 cm long
- Long stick type, the fruit is about 50 ~ 60 cm long
- Medium type, about 40 to 50 cm long
- Short stick-shaped, fruit about 30 cm long
Penghu angular loofah is one of the important economic vegetables in the Penghu area. It is a short stick-shaped local variety, but the fruit is short and easy to bend.
食材及佐料 Ingredients and seasoning
1) 澎湖絲瓜 600克
600g of Penghu Loofah
2) 澎湖麵線 100克
100g of Penghu rice noodles
3) 嫩薑、枸杞 少許
A little of Young ginger, wolfberry
4) 鹽、 香菇粉 適量
Adequate amount of Salt and Fungus powder
烹飪步驟 Cooking steps
【刀工 Cutting / 前處理 Beforehand preparation】
- 絲瓜削皮後,切滾刀。
After peeling the loofah, roll cut. - 枸杞稍微泡水,撈起備用。
Soak the wolfberry in water for a while; drain it pick and set aside. - 將麵線煮熟後,撈起泡冷水。
Cook rice noodles and drain. Then soak them in cold water.
【調理作法 Cooking】
- 煎麵線:從冷水裡撈起麵線,捲成一圈一圈。平底鍋加熱倒入油,將麵線放置鍋中,煎至兩面金黃即可起鍋。
Fry noodles: Drain the noodles from the cold water and roll them up into small circles. Add oil in a pan and heat up. Then, place noodle roll-ups in and fry until golden brown on both sides. - 炒絲瓜:準備炒鍋,開火後放入少許油,放入嫩薑絲稍作拌炒,加半碗水,水滾後先放鹽、香菇粉,放入絲瓜拌炒,再蓋上鍋蓋稍微悶1-2分鐘掀開鍋蓋,確認絲瓜已熟後,放入枸杞後起鍋。
Stir-fried loofah: Prepare a wok and add a little oil after the heat is on. Put shredded ginger in to stir-fry for a while. Then, add a half bowl of water and season with salt and mushroom powder after the water boils. Place in loofah and stir-fry and cover it up with a lid to simmer for 1-2 minutes. When loofah is soften and well done, add in wolfberry and dish up. - 擺盤:將絲瓜放置盤子正中央,煎麵線擺在外圈,食用時將絲瓜和湯汁搭配麵線一起吃,風味更佳!
Plate loofah & rice noodles: Place the loofah in the center of the plate, and the fried noodles along the ring. To the best of every bites, eat loofah, soup and noodles all together!
