綠竹筍季節即將到來,綠竹筍富含膳食纖維、蛋白質,亦可降低體脂肪。『綠竹筍佐烏于子醬』是一道讓人視覺、味覺都享受的料理,清脆鮮甜的綠竹筍淋上香濃醬料,撒上素烏魚子、羅勒葉,營養又低熱量。

食材及佐料 Ingredients and seasoning
1) 素烏于子 30克
30g Vegetarian mullet roe
2) 綠竹筍 2支
Two Oldham Bamboo Shoot
3) 素高湯 150cc
150ml Vegetarian Soup
4) 純素鮮奶油 40克
40g Vegetarian Whipping Cream
5) 純素奶油 30克
30g Vegan Butter
6) 薑末、胡椒、羅勒葉 少許
A little of Minced Ginger, Pepper, Basil
7) 油 適量
Adequate amount of Oil
以上為10人份的食材量。

烹飪步驟 Cooking steps
【刀工/前處理 Beforehand preparation】
- 綠竹筍川燙熟,去殼切長條三角狀冷卻備用。
Blanch Oldham bamboo shoots, and then shelled & cut them into long triangles for later use. - 素烏于子切片。
Slice vegetarian Mullet roe.
【調理作法 Cooking】
- .用少許油及小火將素烏于子香煎,起鍋後搗碎備用
Add a bit of oil and fry sliced vegetarian mullet roe with low fire, and mash it for later use. - 調醬:奶油將薑末炒香並加入素高湯、鮮奶油及胡椒滾沸即可。
Making sauce: stir-fry the minced ginger with vegetarian butter and add the vegetable stock, cooking cream and pepper to a boil. - 擺盤:將綠竹筍擺盤淋上醬汁,灑上素烏魚子和羅勒葉。
Accompaniment & Garnish: Place Oldham bamboo shoots on the plate; top with the sauce; sprinkle with mashed mullet roe and basil leaves.

- 素烏于子可用切碎。
Vegetarian mullet roe can be mashed first before frying. - 羅勒葉可用巴西里代替。
Parsley can be used as an alternative to basil leaves.
