吉祥福袋是一道手作菜,小巧精緻非常喜氣!觀音山主廚將多種食材切細、炒香、調味料理後,包入福袋豆皮中,外表就象古時候的錢袋,也有財源滾滾之象徵。將福袋一口咬下,醬汁及餡料在嘴中化開,絕對是一道新年餐桌上的人氣料理!
Fortune Pocket is a handmade dish, small and delicate, and very festive! GuanYinShan chef finely chops various ingredients, stir-fries them, seasons them, and then wraps them in bean curd sheets to resemble ancient money bags, symbolizing prosperity. When you take a bite of the fortune pocket, the sauce and filling melt in your mouth, making it a popular dish on the New Year’s table!
食材及佐料 Ingredients and seasoning
1) 火腿 300克
300g Vegetarian Ham
2) 芋頭 100克
100g Taro
3) 馬蹄 3顆
3 Chinese Water Chestnut
4) 竹筍 100克
100g Bamboo Shoot
5) 乾香菇 50克
50g Dried Shiitake Mushrooms
6) 紅蘿蔔 30克
30g Carrot
7) 芹菜 1把
1 bunch of Celery
8) 香菜 適量
Adequate amount of Coriander
9) 枸杞 少許
A little goji berries
10) 福袋 10個
10 Bean curd
11)素蠔油、胡椒粉、鹽巴 適量
Adequate amount of Vegetarian Oyster Sauce, Pepper and Salt
12) 香油 少許
A little bit of Sesame Oil
13) 薑末 5克
5g of Minced Ginger
14) 太白粉 20克
20g of Cassava Starch
以上為5人份的食材量。

烹飪步驟 Cooking steps
【刀工 Cutting / 前處理 Beforehand preparation】
- 火腿、香菇、馬蹄、芋頭、紅蘿蔔、竹筍皆切小丁0.5公分。
Thighs, mushrooms, water chestnuts, taro, carrots, and bamboo shoots are all diced into 0.5 cm pieces. - 香菜只用梗,切細末。
Use only the cilantro stems and finely chop them. - 芹菜葉子剝掉。
Peel the celery leaves. - 福袋預先褪冰。
Pre-thaw the bean curd. - 枸杞先用飲用水洗過。
Rinse the goji berries with drinking water.
【調理作法 Cooking】
- 香菇和火腿先炒,再依序放入竹筍炒香,接著放芋頭、紅蘿蔔炒,最後,放入馬蹄炒香。
Stir-fry the mushrooms and ham first, then stir-fry the bamboo shoots in sequence. Add taro, carrots, and finally, add the water chestnuts and stir-fry all ingredients. - 用調味料調味,加一點點素蠔油和適量鹽巴、胡椒粉。
Season with seasonings, adding a little vegetarian oyster sauce and the right amount of salt and black pepper. - 加入香菜攪拌、滴入香油並將餡料放涼。
Add the cilantro, drizzle with sesame oil, and let the filling cool. - 芹菜梗川燙後,放入冷水冷卻。
Blanch the celery stems, then cool them in cold water. - 福袋退冰後,將炒好的餡料包入。
After the dumplings are thawed, fill them with the cooked filling. - 餡料包好,用芹菜梗綁福袋。
Once the filling is in, tie the dumplings with the celery stems. - 最後,將福袋放入電鍋蒸10分鐘。
Finally, steam the dumplings in a rice cooker for 10 minutes. - 勾芡:薑炒香,加入10CC蠔油,加10CC的水,再加入稀釋太白粉攪勻勾芡。
To make a starch-thickened sauce: Stir-fry the ginger, add 10cc of vegetarian oyster sauce, add 10cc of water, and then add diluted cornstarch to thicken. - 最後,加上少許枸杞。
Finally, add a few goji berries.

- 餡料約包六分滿。
Fill the filling to about two-thirds full. - 馬蹄可用豆薯替換。
You can substitute water chestnuts with yam beans. - 可加入枸杞和花椰菜擺盤。
You can add goji berries and cauliflower for plating.
