天貝又稱丹貝,是印尼的傳統發酵食品,大多是由黃豆製成,天貝低脂、高鈣、高蛋白,是素食者不能錯過的高營養美食。觀音山主廚特調獨特醬汁,吸飽醬汁的天貝,吃起來口感綿密扎實,搭配花生米酥脆又入味!
Tempeh or Tempe is a traditional Indonesian soy product that is made from fermented soybeans. Tempe is low-fat, high-calcium, and high-protein. It is a highly nutritious food that vegetarians cannot miss. The chef of Guanyinshan prepares a unique sauce for this dish. The tempeh tastes dense and firm and fully soaked the flavored sauce. Sprinkle some peanuts which make it even more crispy and delicious!
食材及佐料 Ingredients and seasoning
1) 天貝 200克
200g Tempeh
2) 鹹花生米 50克
50g Salted Peanuts
3) 紅椒、黃椒 各30克
30g Red Pepper and Yellow Pepper
4) 薑末 20克
20g Minced Ginger
5) 白芝麻、白胡椒粉、水 少許
A little White Sesame, White Pepper, Water
6) 素蠔油、香椿醬、番茄醬、糖、油 適量
Adequate amount of Vegetarian Oyster Sauce, Chinese Toon Sauce, Ketchup, Sugar and Oil

烹飪步驟 Cooking steps
【刀工 Cutting / 前處理 Beforehand preparation】
- 天貝切0.8公分厚,3公分片狀。
Cut tempeh into 0.8 cm thick and 3 cm slices. - 紅、黃椒去籽,切0.8公分丁。
Remove seeds from red and yellow peppers and cut into 0.8 cm dice.
【調理作法 Cooking】
- 天貝油炸至金黃色。
Fry tempeh until golden brown. - 紅、黃椒丁過油備用。
Roughly fry red and yellow peppers for later use. - 熱鍋,薑末爆香,加入素蠔油、番茄醬 、糖、白胡椒粉及少許水,略滾。
Heat the pan; sauté the minced ginger; add vegetarian oyster sauce, ketchup, sugar, white pepper and a little water, and boil slightly. - 加入天貝、香椿醬拌炒,最後加入鹹花生米拌勻。
Stir fry tempeh with toon sauce, and add salted peanuts to mix well. - 盛盤,撒上甜椒丁、白芝麻即可。
Dish up with bell pepper and white sesame seeds.
